Geräucherte Wurst (Smoked Sausage)

Ingredients

5 kg
ground meat (pork or beef)
1 tsp
baking soda
3 tbsp
brown sugar
4 tsp
black pepper
4-5 tsp
minced garlic
80 g
salt
1 l
water
2 tsp
coriander
3 tsp
basil

Directions

Mix all ingredients together and stuff into 40 cm long pork casing. Tie ends of casing together with three knots, leaving 4-5 cm of casing on each end. Bake for 15-20 minutes at 80-90 C (180 F). Turn down oven to 60 C (140 F) and bake an additional 1 1/2 hours.
