Cut out the stock of the cauliflower and remove the leaves. Cut cauliflower head into small florets, wash and drain.
Wash broccoli and drain. Remove leaves. Cut into floret, cut the shortened stalks crosswise and peel the stalks. Clean carrots and cube. Cut ham into strips.
Bring saltwater to a boil and cook cauliflower 3 minutes then add the carrots and broccoli florets and cook another 7 minutes.
Pre-heat oven to 200 C (400 F).
Melt butter in pan, add flour and stir. Pour in cream and milk, and stir continuously. Let simmer 3-4 minutes. Stir in cheese. Add spices and simmer another 2-3 minutes.
Put the vegetables in a casserole dish, sprinkle with the ham and pour the cheese sauce over.
Bake at 180 C (350 F) for approximately 15 minutes, until crispy.
