Arroz Valenciana

Ingredients

1/2 lb
chicken thigh / breast, boiled and chopped
150 g
chorizo or hot dog, sliced diagonally
2 1/2 c
lutinous rice, washed and drained
1
medium red bell pepper, cut into strips
1
medium carrot, cut into strips
1/2 c
raisins
1 tbsp
turmeric powder
1/2 c
green peas
2 c
chicken broth
2 c
coconut milk
1
medium onion, diced
3
cloves garlic, diced, or crushed
1/2 c
butter or margarine
to taste
salt
banana leaves

Directions

  1. Sauté onion and garlic into melted butter or margarine.
  2. Put in chopped chicken meat, then add chicken broth, coconut milk and turmeric powder. Mix well.
  3. Put in chorizo, or hot dog then add salt to taste.
  4. Put in glutinous rice. Mix well. Simmer for 3 minutes.
  5. Put in carrots, green peas and red bell pepper. Mix well.
  6. Cover with banana leaves and cook in low heat until the rice is fully cooked
