Apple and Maple Muffins

Ingredients

1 1/3 c
flour
1 c
oatmeal
2/3 c
sugar
1 tbsp
baking powder
1 1/2 tsp
cinnamon
1/2 c
milk
1
egg, beaten
1/3 c
melted butter
1/4 c
maple syrup
2 c
apples, peeled and diced

Directions

Pre-heat the oven to 380 F. In a large bowl, combine the flour, oatmeal, sugar, baking powder and cinnamon. Set aside.

In another bowl, combine the milk, beaten egg, melted butter and the maple syrup. Incorporate the liquid ingredients with the dry ingredients. Mix well.

Add apples to the batter, scoop the batter into a non-stick muffin pan, filling each compartment with two-thirds full.

Bake 25-30 minutes or until inserted toothpick comes out clean.
