Okroshka (Russian Cold Soup)

Okroshka

Ingredients

1 bunch
green dill, chopped
1 bunch
green onion, finely chopped
1 bunch
radishes, cubed
200 g
lean sausage, cubed
6
hard boiled eggs, cubed
1
cucumber (fresh), cubed
250 g
sour cream
1/2 tsp
salt
pinch
black pepper
2 l
water
3 - 4 tbsp
vinegar (5%)

Directions

  1. Mix all the vegetables together in a bowl. Add water, vinegar, sour cream, salt and pepper.
  2. Mix everything and put into fridge for 30 – 60 minutes.

You could add more vinegar or salt if you like.

Yield: 8 Servings
