Mennonite Soft White Cookies

Part 1 - Cookies

1 c
shortening
1 1/2 c
sugar
2
eggs
1 tsp
vanilla
1 c
buttermilk
4 c
flour
4 1/2 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt

Cream shortening and sugar together. Add eggs and vanilla and beat well.

Mix flour, baking powder and soda and salt in a separate bowl.

Stir flour mixture alternately with the buttermilk into a creamed mixture until it forms a soft ball.

Add extra flour if necessary. Cover and chill in the fridge for about 1 hour.

Roll out on to a floured surface to about 1/4 inch thickness, cut into circles or desired shapes and place on a cookie sheet.

Bake at 375 F degrees for 9 minutes.

Part 2 - Icing

2 tbsp
butter
1/2 c
milk
1/2 tsp
vanilla
2 c
icing sugar
1/2 c
coconut (optional)

Mix all icing ingredients until mixture is of spreading consistency. Make sure butter is softened before using. You can also add food colouring if desired.

Directions

When cookies are cool, ice with icing sprinkle coconut on tops as desired.

Yield: 5 Dozen
